Ingredients

  • 1 cup quinoa rinsed well and drained
  • 3 cups parsley, fresh firmly packed, roughly chopped
  • 2 tbsp mint, fresh finely chopped
  • 1 tbsp lemon verbena, fresh optional - finely chopped
  • 3 green onions finely sliced
  • 2 tomato diced
  • 1 cucumber seeds removed and diced
  • 1 lemon juiced and zested
  • 1/4 cup olive oil

Instructions

  • Bring 1 litre of water to the boil in a pot and add the drained quinoa.
  • Cook for 15 minutes, then drain well.
  • Cool to room temperature.
  • Combine cooled quinoa and remaining ingredients in a bowl and toss to combine thoroughly.
