Dairy-free Salted Caramel

Ingredients

Ghee
or Dairy-free margarine
80
ml
Full fat Coconut cream
1/2
cup
White sugar
3/4
tsp
Salt
1/4
cup
Glucose
1/4
cup
Water
Instructions
Combine ghee and coconut cream and set aside.
In a heavy based saucepan, combine sugar, salt, glucose and water and bring to the boil.
Continue to boil until it changes colour to a golden brown.
Be careful not to burn it as it changes colour VERY fast!
Immediately remove from the heat and very carefully add the ghee mixture.
Be extra careful as it will spit and bubble up.
Once the bubbles have subsided, whisk carefully until smooth.
Set aside to cool.
Refrigerate until required.
