Chia would hands-down have to be my 12 year old’s all-time favourite breakfast.

Given that it’s chocolate pudding, I should hardly be surprised right! It’s so quick and easy to make, that she usually throws it together herself, often making extra to snack on through the day, or have for dessert after dinner as a special treat.

I love chia because it is jam-packed full of goodness. They contain a whopping 37.7g of fibre per 100g of seeds and are a great source of omega-3 fatty acids. They are also a great source of several minerals including zinc, phosphorous and the trace element manganese.

Chia is readily available in most supermarkets these days, even out here in the country where I live, and a little goes a long way, so they don’t take up much space in the pantry either.

Chia pudding is a fantastic time saver for the school morning rush too, as it can be made ahead the night before so it’s ready to go when you are.

The cacao and coconut milk can easily be replaced with pureed fruit for lots of tasty variations.
