Black Forest Chia Pudding

Ingredients

  • 1/3 cup chia seeds
  • 1 Tbsp raw cacao powder
  • 1 Tbsp honey
  • 1 cup coconut milk or almond milk
  • 2 Tbsp sweet cashew cream
  • 2 Tbsp cherries tinned or fresh
  • 1 sprig mint, fresh to garnish

Instructions

  • Combine chia, cacao, honey and coconut milk. Stir well and set aside for 10 minutes.
  • After 10 minutes, stir well again and then divide between 2 serving dishes.
  • Dollop the cashew cream over the top of the chia mixture.
  • Divide cherries between the two servings and garnish with mint.

Notes

This mix can be made up to a couple of days ahead, so why not make up a triple batch and divide into individual serving dishes on Sunday afternoon, and then you’ll have breakfast all ready to go for those rushed school mornings.
