Dairy-free Salted Caramel

Ingredients

  • 90 g Ghee or Dairy-free margarine
  • 80 ml Full fat Coconut cream
  • 1/2 cup White sugar
  • 3/4 tsp Salt
  • 1/4 cup Glucose
  • 1/4 cup Water

Instructions

  • Combine ghee and coconut cream and set aside.
  • In a heavy based saucepan, combine sugar, salt, glucose and water and bring to the boil.
  • Continue to boil until it changes colour to a golden brown.
  • Be careful not to burn it as it changes colour VERY fast!
  • Immediately remove from the heat and very carefully add the ghee mixture.
  • Be extra careful as it will spit and bubble up.
  • Once the bubbles have subsided, whisk carefully until smooth.
  • Set aside to cool.
  • Refrigerate until required.
