Dairy-free Salted Caramel
Ingredients
- 90 g Ghee or Dairy-free margarine
- 80 ml Full fat Coconut cream
- 1/2 cup White sugar
- 3/4 tsp Salt
- 1/4 cup Glucose
- 1/4 cup Water
Instructions
- Combine ghee and coconut cream and set aside.
- In a heavy based saucepan, combine sugar, salt, glucose and water and bring to the boil.
- Continue to boil until it changes colour to a golden brown.
- Be careful not to burn it as it changes colour VERY fast!
- Immediately remove from the heat and very carefully add the ghee mixture.
- Be extra careful as it will spit and bubble up.
- Once the bubbles have subsided, whisk carefully until smooth.
- Set aside to cool.
- Refrigerate until required.
