Sticky fingers alert!!
These super scrummy beef bites were VERY popular with the kids (big kids included!). While I thought they’d be nice served up on a bed of rice with some steamed greens on the side, the rest of the family think they are much more suited to eating as finger food with a big side of wedges!
Either way, they are really easy to cook, and give a lovely bbq flavour, without having to go outside and light the ‘cue, thanks to the smokey flavour of the smoked paprika.
And the leftovers scored a big thumbs up in lunchboxes the next day!
As a quick money saving tip, rather than using steak, buy a topside roast when it’s on special, and cut it up into large cubes.
BBQ Glazed Beef Bites
Ingredients
- 6 rashers bacon
Glaze
- 350 ml passata or tinned tomatoes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp oregano, dried
- 1/2 tsp thyme, dried
- 1 tsp smoked paprika
- 1 tbsp sweet paprika
- 1 tbsp honey
- 1 pinch salt
- 1 pinch pepper
Rissoles
- 500 g beef mince
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp oregano, dried
- 1/2 tsp thyme, dried
- 1/4 tsp smoked paprika
- 1 tsp sweet paprika
Instructions
Glaze
- Whisk all ingredients together until smooth.
Rissoles
- Combine all ingredients and shape into rissoles.
- Make an indentation with your finger in the centre of each rissole. (This keeps them flat as they cook and prevents them puffing up in the middle and turning them into a ball shape)
- Wrap a slice of bacon around each rissole.
- Cook the rissoles for 20 minutes over a low heat, preferably on a bbq.
- Every 5 minutes while cooking, baste the rissoles with the glaze and turn them.
