We’ve been lucky enough to have some beekeepers put their hives on our property in the last month, and in return, they have blessed us with as much beautiful, luscious honey as we like!
To celebrate this golden goodness, I came up with this recipe. It would have to be one of the most delicious, decadent and luscious vegetable dishes I’ve ever made! It’s quick and easy, but an absolute crowd pleaser!
Sweet Potato Mash with Honey Macadamias
Ingredients
- 4 sweet potatoes, small peeled and quartered
- 4 cloves garlic
- 2 tbsp almond milk or coconut milk
- 1/4 cup macadamias roughly chopped
- 2 tsp ghee
- 1 1/2 tbsp honey
Instructions
- Boil the sweet potato and garlic until soft.
- Mash the sweet potato and garlic with the milk until smooth.
- In a medium frypan, toast the macadamias until lightly browned, remove from the pan immediately and set aside.
- Just before serving, heat the ghee, macadamias and honey over high heat until it just starts to darken in colour. Be VERY CAREFUL as it will foam up and increase in volume!
- Immediately remove from the heat and pour over the mashed sweet potato.
