Hmmm. I seem to keep coming back to chocolate?

This time it isn’t my fault. I promise!

My 12 year old had one of her school friends come over the other day and she wanted to plan a nice lunch for her.

We did the usual Pinterest perusal trying to think of what to make, and she spotted a really yummy fruit and chocolate skewer which she wanted to make for dessert.

It was basically a chunk of banana, spread with Nutella and then topped with a fresh strawberry, all held together on a pretty wooden toothpick.

Unfortunately, we couldn’t find any pretty wooden skewers in our supermarket, and Nutella is far from dairy-free (not to mention it’s other questionable ingredients). So, as they say, necessity is the mother of all invention!

We pulled out the thermomix and raided the pantry to see if we could come up with a suitable alternative. We must have – you’ve probably noticed there are no photos of the lovely fruit and chocolate sticks.

I decided the let the girls make their own. They were so delicious apparently that they didn’t even make it onto the platter to take to the table! Yep, my two girls and their friend stood in the kitchen, giggling and gobbling until all the fruit was gone! I’m guessing that means the spread tasted good???

Chocolate Hazelnut Spread

Servings: 1 cup

Ingredients

  • 160 g hazelnuts
  • 1/4 cup raw cacao
  • 1 pinch sea salt
  • 1/4 tsp vanilla extract
  • 2 tbsp rice bran syrup or honey
  • 1 tbsp coconut oil
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 180oC and place the hazelnuts in a single layer on an oven tray
  • Bake the hazelnuts for around 10 minutes until the skins become loose and papery.
  • Tip the hazelnuts into a clean tea towel on the bench and rub them gently to remove the skins.
  • Place the peeled hazelnuts and all remaining ingredients into a blender, food processor or thermomix and blend on high speed until smooth.
  • Place in an air tight jar.
