Thyroid-friendly Coleslaw
Ingredients
- 1 red onion thinly sliced
- 1/4 tsp sea salt
- 2 tbsp red wine vinegar or any other vinegar, or kombucha
- 1/3 cup Aioli or mayonnaise
- 1 clove garlic crushed
- 1 tbsp fresh mint sliced
- 1 tbsp fresh thyme finely chopped
- 4 Carrots grated
- 1 red capsicum thinly sliced
- 1/2 cos lettuce, large shredded, (romaine lettuce)
- 4 button mushrooms thinly sliced
- 2 green onions thinly sliced
Instructions
- Combine onion, salt and vinegar. Set aside for 5 minutes.
- Whisk in aioli, garlic, mint and thyme.
- Add remaining vegetables and stir well to coat thoroughly.
Notes
I use the Cos lettuce in place of cabbage in my coleslaw as my daughter can't eat raw cabbage due to her thyroid condition, but if it's not an issue for you, you can use either cos or cabbage. The Cos makes for a lighter, slightly sweeter and less bitter slaw, which my kids prefer.
